Why don’t you go over fineness of Japanese green tea?
To drink green tea is good for your health and beauty, and it is often said that green tea has 1000-year history. Originally it is imported from ancient China by Japanese envoy. It now became a culture of tea ceremony by Japanese wisdom and sensitivity over a long time. When you pour hot water into tea bowls silently and hold it with both your hands, you can meet calm and rich time. I recommend you to enjoy the time.
There are many kinds of Japanese tea. This time I wanna introduce some of them.
<Sen-Cha (natural leaf tea)>
This is the most general green tea, and young leaves of first picked tea is used.
Recently deep-steamed tea, which has fine color and taste, has been distributed well. The taste is balmy due to a harmony of umami (amino acid) and bitterness (catechin), and it includes caffeine moderately.

<Ban-Cha (coarse tea)>
Second-picked tea in July and third-picked tea in August are used.
Its umami is less and bitterness is stronger than “Sen-Cha”. Additionally its caffeine is low and price is cheap, thus it is well-suited to fasting and bedtime drink.
<Hoji-Cha (roasted tea)>
“Sen-Cha” and “Ban-Cha” become savory “Hoji-Cha” after roasting. It tastes light without bitterness, so I recommend you to drink after greasy foods. In addition it is well-suited for children and elderly people, because its caffeine is quite low.
<Gyokuro (refined green tea)>
This is high quality tea. Leaves are protected from direct sunlight before weeks of first-picking, thus umami (amino acid) is increased and bitterness (catechin) is reduced. In consequence it tastes very mild. You will be able to spend elegant moments due to Gyokuro with warm water.
<Matcha>
“Matcha”is dehydrated and powdered without kneading after cultivating like “Gyokuro”. This is exactly high-quality tea. You don’t use teapots, instead tea-ceremony bowls are prepared. You pour hot water into tea-ceremony bowls and whisk it with a bamboo whisk. You can drink it with milk called Matcha Latte.
